Dear Menglin Liu:
I have reviewed your recent request to use an internal grease interceptor for the above-mentioned
restaurant. Based on the information you have provided me, we will allow the use of an internal
interceptor with the following conditions:
1. The holding capacity has to be at least 50 gallons or larger.
2. Installed for easy access,(cleaning and inspection).
3. The trap is to be cleaned every night and properly disposed of.
4. Up-to-date maintenance records are to be kept on the premises for inspection at
any time.
5. All employees must have knowledge of this policy.
6. The Wastewater Department is to receive a copy of the interceptor specifications.
7. If unexpected amounts of grease are being discharged into the Town's sanitary
mains, an exterior, precast concrete trap will be required to be installed.
