Senior Sanitary Engineer New York State Department of Health Glens Falls District Office 77 Mohican Street Glens Falls, New York 12801 Re: The Great Escape— Funnel Cakes Concession Stand Grease Trap Replacement Jarrett-Martin Engineers, PLLC #01-030 Dear Mr. Bruso: Per our April 27, 2001 phone conversation, attached you will find grease trap replacement plans for Funnel Cakes located at the Great Escape, U.S. Route 9, Queensbury, New York. The Funnel Cakes facility currently is served by a steel 350 gallon grease trap. It was noted during a routine pump out / inspection the tank was no longer watertight (only solids remained, no liquid). Due to this finding, the Great Escape would like to replace the existing steel grease trap with a new pre-cast concrete grease trap. As shown on the attached plans the daily flow to the grease trap is 350 gpd, a minimum of 525 gallons capacity (36 hours detention time) for the new grease trap has been required The new grease trap would be connected to the existing leaching system serving the facility. The existing leaching system (leach pits) is currently functional and the owner reports no signs of failure. Due to the close proximity of the existing building plumbing, the existing grease trap, and the Jumbo Ride (See Plans), the new grease trap would be located less than 10' from the Funnel Cakes building.
