Dear Buddy.:
We would like to take this opportunity to review the septic
system at your restaurant.
We must remind you that all septic systems require mainten-
ance and that commercial systems, especially in your instance
a restaurant, require even more special attention. In a restau-
rant there is an inordinate amount of grease or oil that goes in-
to the system and this has to have time to cool down in a large
chamber before going out into the leach field. This chamber has
to be adequately maintained or pumped so that the left over grease,
past the last baffle, does not go into the field and overload it.
The problems we have experienced in the past few months
have been caused by this very same situation. When we uncovered
tJ e main tank and discovered more than 3-4 feet of grease in the
top of the tank and examined the distribution box, we found the
field pipes completely covered with grease, indicating a complete
overload of the system.
We have to this point tried very hard to work with you, not
only mechanically, but financially. We will continue to do so in
the future, but you must understand that this problem has to be
addressed and corrected immediately or the whole system may fail.
We would recommend that the tanks be pumped on a bi-weekly
basis until we can work out the specific details of a solution.
